PUNJABI KADHI/HOW TO MAKE KADHI PAKORA /HOW TO MAKE SIMPLE PAKORA

Kadhi is a sour dahi(curd) mixed with besan, spices and delicious pakora's(Onion Fritters).It is such a comfort food.Whenever I am visiting my Mom I request  her to make Kadhi -Chawal as a dish . I simply love it.The sourness in the dish and love of my Mom while making it makes it complete.This is one such dish when someone is visiting unannounced you can rely on it.
Kadhi is such a dish which has different flavors and different taste in every other state.In Gujrat, the kadhi is sweet in taste and white in colour while Marwadi/Rajasthani Kadhi is super spicy.But Punjabi kadhi has the balance in taste.
Earlier I use to be very confused while making it considering the ratio of chickpea flour(besan) and Dahi(curd) but then my mom taught to go for 1 cup of yogurt  and 4 tbsp Besan. and tada............
So now let me not blabber more and start with the recipe.Yum yum.....

INGREDIENTS:

  • YOGURT-1 CUP
  • CHICK PEA FLOUR-4 TBSP(BESAN)
  • SALT
  • RED CHILLI PWDR-1/2 TSP
  • HING-1/4 TSP
  • WATER
  • ONION-1 CUP SLICED (FOR PAKORA)
  • ONION-1/2 CUP SLICED (FOR KADHI)
  • GARLIC-8-10 GRATED
  • CORIANDER LEAVES
  • GREEN CHILLI-2
  • FENUGREEK SEEDS-1/2 TSP
  • MUSTARD SEED-1/4 TSP
  • TURMERIC-1/2 TSP
  • OIL

PROCEDURE
  • Take a big bowl add onion and add all the spices salt, red chilli pwdr, garlic, green chilli and water and make thick batter for pakora's.
  • Take oil in a Karahi , when it is hot add spoonfull of mixture to it and fry them in oil.
  • Now Pakora's are ready.
  • Take another bowl add Yogurt, Besan, salt, red chilli and turmeric and mix the yogurt well.
  • Add water to the yogurt Besan mixture.
  • Now in  big open karahi add oil to it
  • Add Fenugreek Seeds to it, now add grated garlic to it
  • when garlic is brown add onions to it and fry them well
  • now add the Mixture of Yogurt to it and let it simmer
  • The best way to get a Delicious kadhi is to let it simmer on low medium not on high flame
  • When you see a thickness in the kadhi that means it is done
  • Now add pakora to it and let it simmer more for 5 mins
  • Take a tarka pan add hing(asafoetida) to it now add red chilli to it and pour this mixture on to kadhi.
  • Serve it with steamed rice.
