NEW PARANTHA TYPE/GAJAR GOBHI KA PARANTHA/CARROT CAULIFLOWER STUFFED PRANATHA
Just when the weather changes, and you find it hard to get up in the morning and those 5 minutes more in bed turns out to be 15 minutes as you open your eyes.This is the very first signal that winter has arrived.
For me a true Punjabi I love winters, a whole lot of food with extra butter, nuts, Pinni, sweets Makki ki roti and Sarson da Saag.....
I love how our winter foods are consisting of extra natural oil, extra fat and vitamins for these months.And my kiddo loves butter and i love to feed him and my husband with extra dollop of butter as more love...:)
This Parantha is a new type in which I have mixed carrot and cauliflower together to give extra nutrition to the family.So let's begin.Yum Yum....

INGREDIENTS:
- DOUGH-FOR PARANTH
- CAULIFLOWER-GRATED(QUANTITY ON YOUR CHOICE)
- CARROT-HALF OF CAULIFLOWER(OTHERWISE IT WILL BE TOO SWEET)
- SALT
- ONION-1 CHOPPED
- CORIANDER
- GARLIC-2-3 CLOVES GRATED
- GINGER-1/2 INCH
- RED CHILLI PWDR-1/2 TSP
- CORIANDER PDWR-1/2 TSP
- GREEN CHILLI-1 FINELY CHOPPED
- OIL-FOR FRYING
PROCEDURE
- Wash and grate cauliflower and carrot separately .
- Squeeze out any extra water if there, then mix them.
- Add grated garlic, ginger, chopped onion, coriander leaves and other spices to the mixture and keep it ready for the filling.
- Take out a small amount of dough and roll it out to 4-5 cm in size, roll out another same size roti and keep it aside
- take the filling from the mixture and spread it out completely on one roti, then cover it with another roti and roll them together.
- carefully roll them so that no filling should escape from the parantha and then flip it to the tava for cooking
- When one side is roasted add oil to it and roast it to other side like usually parantha's.
- When done serve it with butter and yoghurt.
