ALSI KI PINNI/HOW TO MAKE FLAX SEED PINNI/WINTER WARMER A PINNI!!
PINNI are uniquely traditional Punjabi sweet dish which are often mistaken as laddu but they are not.The main difference between laddu and Pinni is laddu are fried in ghee and have a shell life of few days although Pinni are made up of roasted flour,nuts and dals and are very rich in taste also they have long shell life.
There are other difference as well, Pinni are dry and not soaked in sugar syrups whereas laddu are done. Pinni are made and served in winter in Punjab as they give lot of warmth and energy. The way these are prepared they don't turned bad and can be eaten for months.There are many types of Pinni which can be made such as:-

Ans so on...If I will be discussing each and every one and how they differ then this post will be really long.
So now let's start making this.Yum Yum.....
INGREDIENTS:
- FLAX SEEDS-1 CUP
- WHEAT FLOUR-1 CUP
- JAGGERY-3/4 CUP
- GAUND-3/4 TBSP
- ALMOND-1/4 CUP
- RAISIN-1/4 CUP
- CASHEW NUT-1/4 CUP
- GHEE-1-1/2 CUP APPROX.
- SOONTH POWDER-1 BIG SPOON(GINGER POWDER)
- WATER-FOR JAGGERY SYRUP
PROCEDURE:-
- Dry roast the Flax seeds alone in a pan and you will listen the crackling sound of it.
- Take it out and let it cooled down, when done done powder it in mixie jar. and keep it aside
- Take Ghee in the same pan and roast all the nuts one by one to golden brown and then cool them and later powder them like Flax seeds.
- Add more Ghee to the pan and fry the Gaund to it, be carefully and lower the gas as it swells up and you now crush them to powder and keep it ready.
- Now finally roast the flour and add Ghee slowly as required and keep it to golden in colour.
- Now once the flour is completely roasted keep it ready.
- On another flame take a frying pan and dissolve the Jaggery to it by making syrup of thick consistency.
- Slowly add all the contents into the frying pan and ix well it should be of thick consistency so that we can join it to make a Pinni.
- Switch off the flame and let it cooled down so as we can handle the temperature.
- Now start making Pinni as it should not be too cooled other wise we will not be able to make the Pinni.
