BAIGAN KA BHARTA/SMOKED BRINJAL/ SMOKED AUBERGINE/EGGPLANT

A very simple yet very tasty dish without the much use so many masalas and spices. A must punjabi dish which is very often prepared in our house. My mum prepares this dish very finger licking.yum yum. ..
So lets get started...


INGREDIENTS


  • BRINJAL-2 NO
  • OIL-2-3 TSP
  • ONION-1/2 CUP CHOPPED
  • TOMATOES-1 CUP CHOPPED
  • PEAS-1/2 CUP(OPTIONAL)
  • GINGER-1/2 INCH GRATED
  • SALT-TO TASTE
  • RED CHILLI PWDR-1/4 TSP
  • CORIANDER PWDR-1/4 TSP

PROCEDURE

  • first of all wash the brinjal
  • then apply very little amount of oil and put it on gas burner on low-medium flame to roast
  • in between keep it on rotating, be careful not to burn the brinjal, we just have to roast it.
  • when it is done, keep it aside


  • boil the peas in a pan, make it soft but not mushy.
  • peel the black skin of brinjals and mash them with help of fork.

  • take a kahari/pan
  • add oil to it, then add grated ginger to it
  • fry the ginger and add chopped onion to it
  • fry them, when it is golden brown add tomoties to it and add all the spices to it as well
  • fry all the spices and when oil starts to separate out, add peas to it and then add the mashed brinjal to it.
  • mix them well.
  • keep on bhuno them.
  • Awesome punjabi baigan ka bharta is ready
  • serve it with coriander leaves.
